Clean-Eating Strawberry Spinach Salad & Vinaigrette
Holiday meals can be a challenge when you are eating clean to help heal autoimmune disease. It’s especially difficult if you are traveling to a friend or relative’s home and cannot control the whole menu. My family has been very supportive and always keeps my healing diet in mind.
This past weekend my sister’s youngest son was confirmed on Easter Sunday. My contribution was a clean, but tasty salad. I want to share this wonderful recipe with you. It comes from The Gracious Pantry.
Salad:
Ingredients- 2 cups baby spinach
1 cup strawberries (sliced)
¼ cup walnuts (chopped)
¼ Medium avocado (optional)
Dressing (see below)
Directions- put all ingredients in a bowl and toss with dressing. Serve.
Strawberry Vinaigrette:
Ingredients- ½ lb. fresh strawberries
2 tbsp. honey
2 tbsp. apple cider vinegar
2 tbsp. olive oil
¼ tsp. salt
¼ tsp. ground black pepper
Directions- Place all ingredients in a blender and blend until smooth. Adjust honey to taste.
