Chia Seed Pudding

Being on a clean diet often means preparing my own meals and snacks since packaged/convenience food items contain lots of food no-no’s. This is also true with desserts. That’s why I wanted to share this super simple dessert with you. With all the meal prep I do, sometimes easy and delicious is a gift to myself!!! This healthy, 4 ingredient pudding is just right. I cannot have almonds; therefore, I use nondairy milks such as coconut, hazelnut or cashew, but almond would work fine if it’s a safe food for you.

1/4 Cup Chia Seeds

1 Cup unsweetened Hazelnut milk (or favorite non-dairy milk)

1 Tablespoon Raw Honey

1 1/4 tsp Vanilla

Combine all ingredients in a small bowl. Whisk together until everything is well blended. Pour into individual containers or leave in the original. Cover and place in the refrigerator. After 3 hours remove lids and stir briskly. Replace covers and put in refrigerator 6 hours or overnight.
